I'm part native american and I totally inherited the delicate digestive tract of the plains indians, so I struggle with a lot of animal products (and fats). I do know (from my own research) that if it's lactose you're allergic to, the bacterial cultures at work in cheese will convert most of the lactose during the aging process involved in cheeses like cheddar and cave-aged gruyeres. Maybe there's still a little bit of cheese out there for you?
